According to a review published in Comprehensive Reviews in Food Science and Food Safety, young bamboo shoots “are rich in nutrient components, mainly proteins, carbohydrates, minerals, and fibre and are low in fat and sugar.” Specifically, the authors noted that fresh shoots are a good source of thiamine, niacin, vitamins A, B6, and E, potassium, calcium, manganese, zinc, copper, iron, and chromium, and contain 17 different amino acids, eight of which are essential for human health.

Well, here we go again… while I was growing up in Japan, bamboo shoots (take no ko 竹の子 or 筍) were harvested in late spring. Varieties of dishes are made… two popular dishes are the stewed dishes (nimono 煮物) and bamboo shoot rice (takikomi takenoko gohan 筍炊き込みご飯). Authentic ones are vegetarian, however, chicken meat is used as well.

I was once at a secluded hotel near a small town two or three hours from Bogota and there was a stand of very tall, large, Bamboo nearby. When the wind blew that Bamboo made the most interesting sound. A little spooky maybe.
