Green Tea

Green tea has been used as a medicine for thousands of years, originating in China but widely used throughout Asia this beverage has a multitude of uses from lowering blood pressure to preventing cancer. The reason that green tea has more health benefits attached to it than black tea is (apparently) due to the processing. Black tea is processed in a way that allows for fermentation whereas green tea’s processing avoids the fermentation process. As a result, green tea retains maximum amount of antioxidants and poly-phenols the substances that give green tea its many benefits.

Here’s a list of some of its amazing benefits — benefits that you may not have been aware of. Some of these benefits are still being debated, so please do your own research if you want to use green tea for medicinal purposes.

  1. Weight Loss. Green tea increases the metabolism. The polyphenol found in green tea works to intensify levels of fat oxidation and the rate at which your body turns food into calories.
  2. Diabetes. Green tea apparently helps regulate glucose levels slowing the rise of blood sugar after eating. This can prevent high insulin spikes and resulting fat storage.
  3. Heart Disease. Scientists think, green tea works on the lining of blood vessels, helping keep them stay relaxed and better able to withstand changes in blood pressure. It may also protect against the formation of clots, which are the primary cause of heart attacks.
  4. Esophageal Cancer. It can reduce the risk of esophageal cancer, but it is also widely thought to kill cancer cells in general without damaging the healthy tissue around them.
  5. Cholesterol. Green tea reduces bad cholesterol in the blood and improves the ratio of good cholesterol to bad cholesterol.
  6. Alzheimer’s and Parkinson’s. It is said to delay the deterioration caused by Alzheimer’s and Parkinson’s. Studies carried out on mice showed that green tea protected brain cells from dying and restored damaged brain cells.
  7. Tooth Decay. Studies suggests that the chemical antioxidant “catechin” in tea can destroy bacteria and viruses that cause throat infections, dental caries and other dental conditions
  8. Blood Pressure. Regular consumption of green tea is thought to reduce the risk of high blood pressure.
  9. Depression. Theanine is an amino acid naturally found in tea leaves. It is this substance that is thought to provide a relaxing and tranquilizing effect and be a great benefit to tea drinkers.
  10. Anti-viral and Anti-bacterial. Tea catechins are strong antibacterial and antiviral agents which make them effective for treating everything from influenza to cancer. In some studies green tea has been shown to inhibit the spread of many diseases.
  11. Skincare. Green tea can apparently also help with wrinkles and the signs of aging, This is because of their antioxidant and anti-inflammatory activities. Both animal and human studies have demonstrated that green tea applied topically can reduce sun damage.

Pickled Garlic

Pickled Garlic
adapted from Pam Corbin,

The River Cottage Preserves Handbook

makes five 4-ounce jars

1 pound newer garlic (do it now, not in January)
about 15 peppercorns
5 bay leaves
1 1/2 cups apple cider vinegar
1/3 cup sugar
pinch of saffron threads

Bring a large pot of water to boil. Sterilize your jars for about 10 minutes in the pot, then remove them. Submerge all of the garlic in the hot water, and keep it in for about 20 seconds. Remove, and the garlic will slide right out of its skins.
Put the vinegar, sugar and saffron into a pan. Bring the mixture to a boil.
In a separate little pot, bring a few cups of water to boil. Remove from heat and submerge the lids and bands of your jars. Leave them in the hot water.
Meanwhile, pack the garlic cloves into the sterilized jars, adding a bay leaf and peppercorns as you go. Pour the hot vinegar over the garlic, and top with the lid and band. If the vinegar is hot enough, the jar should seal (the center of the lid will suck down) within a couple of hours. If it doesn’t seal, you can also process in a hot water bath for ten minutes, or store in the refrigerator.
Use within a year.

I think the basic recipe of pickling can be elaborated upon or adapted to your personal taste.

I have posted earlier about the health benefits of garlic.

Kidney Cleanse

Kidney Cleanse

Years pass by and our kidneys are filtering the blood by removing salt, poison and any unwanted entering our body. With time, the salt accumulates and this needs to undergo cleaning treatments and how are we going to overcome this?

It is very easy, first take a bunch of parsley (MALLI Leaves) and wash it clean

Then cut it in small pieces and put it in a pot and pour clean water and boil it for ten minutes and let it cool down and then filter it and pour in a clean bottle and keep it inside refrigerator to cool.

Drink one glass daily and you will notice all salt and other accumulated poison coming out of your kidney by urination also you will be able to notice the difference which you never felt before.

Parsley is known as best cleaning treatment for kidneys and it is natural!

Avocado hands down is one of my favorite foods. I just love them. Love, love, love….do the happy dance. Avocados are also nutritious. They’re high in healthy fats, potassium, and vitamins B, E, and K. And if you use whole wheat bread for the toast, it’s a great way to provide whole grains.

This is Avocado on toast. Put it on some toasted Sesame Ezekiel Bread, add some greens; watercress, cilantro, spinach, a nice tomato or salsa. Just make to your taste. Such a nice summer food. Yummy! I miss Southern California for this reason. Avocado’s were plentiful and affordable.

Lavender Honey Ice Cream

Lavender-Honey Ice Cream

Adapted from The Perfect Scoop by David Lebovitz

Makes about 1 quart

*1/2 cup honey

*1/4 cup dried or fresh lavender leaves (fresh, from my garden is best)

*1 1/2 cups whole milk

*1/4 cup sugar *pinch of sea salt

*1 1/2 cups heavy cream

*5 large egg yolks

1. In a small saucepan, heat the honey and 2 tablespoons of the lavender. When it’s warm, remove from heat and let steep for at least 1 hour.

2. Warm the milk, sugar and salt in a medium saucepan. Pour the cream into a large bowl and place a mesh strainer on top. Pour the lavender-infused honey into the cream through the strainer, pressing down on the lavender flowers to extract as much flavor as possible. Discard the lavender flowers and place the strainer back over the cream.

3. Whisk the egg yolks in a medium bowl. Slowly pour the warm milk into the egg yolks, whisking constantly, then scrape the whole mixture back into the saucepan.

4. Cook over low heat, stirring constantly with a heatproof spatula, until the mixture is thick enough to coat the spatula. Pour the custard through the strainer and stir it into the cream. Stir in the remaining lavender flowers and stir until cool over an ice bath.

5. Chill overnight in the refrigerator. The next day, before churning, strain the mixture, again pressing the lavender flowers to extract their flavor. Discard the flowers and freeze in an ice cream maker according to the manufacturer’s instructions.

Honestly I have not made this. Just sharing for you ambitious Foodies! Let me know. I will try some somewhere.

Rosemary has shown a lot of cancer-protective potential.” Frying, broiling, or grilling meats at high temperatures creates HCAs (heterocyclic amines), potent carcinogens implicated in several cancers. Rosemary contains carnosol and rosemarinic acid, two powerful antioxidants that destroy the HCAs.

Rosemary Potatoes

Easy, easy…

Potatoes How many up to you

Fresh or dried rosemary

Garlic Salt

Olive Oil

Cut the potatoes into small edible pieces. In a large bowl add potatoes, season with the rosemary, paprika, garlic salt (or fresh garlic), salt and pepper. Splash in some olive oil, toss real well. Put on a cookie sheet or shallow baking pan at 350 until done. About 30 to 40 minutes baking time. I do not cook with recipes, so forgive this one.
